Rainbow Cake with Mascarpone Cream

Ingredients
For the Sponge Layers
- 6 medium eggs
- 180 g caster sugar
- 180 g plain flour
- 1 teaspoon vanilla extract
- Lumea Gel Food Colours:
- Vivid Red
- Lemon Yellow
- Leaf Green
- Azure
- Violet
For the Mascarpone Cream
- 500 g mascarpone cheese
- 300 ml double cream
- 100 g icing sugar
- 1 teaspoon vanilla extract
For Decoration
- Sugar pearls
- Sprinkles
- Sugar flowers (optional)
Method
1. Prepare the Sponge Layers
Whisk the eggs and caster sugar together for 8–10 minutes until the mixture becomes pale, thick and tripled in volume.
Add the vanilla extract and gently fold in the sifted flour until fully incorporated.
Divide the mixture equally into five bowls. Colour each portion using a different Lumea Gel Food Colour, mixing until the shades are vibrant and evenly distributed.
Pour each coloured batter into a lined baking tin and bake at 170°C for approximately 10–12 minutes, or until lightly golden and springy to the touch.
Allow the sponge layers to cool completely before assembling.
2. Prepare the Mascarpone Cream
In a large bowl, mix the mascarpone, icing sugar and vanilla extract until smooth.
In a separate bowl, whip the double cream until it forms soft peaks.
Carefully fold the whipped cream into the mascarpone mixture until you achieve a light and silky texture.
3. Assemble the Cake
Place the first sponge layer onto a cake board or serving plate and spread a thin layer of mascarpone cream over the top.
Continue layering the coloured sponges and cream until all layers have been used.
Cover the top and sides of the cake with the remaining cream, smoothing it evenly with a palette knife.
4. Decorate
Decorate with sugar pearls, sprinkles and any other decorations of your choice.
For an even more striking effect, colour a portion of the mascarpone cream using Lumea Gel Food Colours and pipe decorative swirls around the top of the cake.
Top Tips
- Lumea Gel Food Colours are highly concentrated, so only a small amount is required to achieve intense shades.
- For softer pastel tones, use just a tiny drop of colour.
- Chill the cake for at least 4 hours before serving to allow the layers and flavours to set perfectly.
